When making omelets, it is important to be aware that eggs can be temperamental. They must be fresh, preferably from the organic market, and be kept cold until cooking. If you don't keep them cold enough, the whites won't form properly, and the yolks will break down too much and become runny. This causes your omelets to look oddly colored. If you're going to cook them immediately, it is best if the eggs are still warm.

You can also separate the egg before you add it to the pan. You don't want any white to get mixed up with the yolk because this could cause the omelet to curdle.

You could end up burning the bottom half of the egg if the egg is added directly to the heat source. Instead, place the egg in the microwave for 10 second before you put it in the skillet. The microwave heat cooks the eggs just right without overcooking them.
